Brindisa will play host to our next Little Galicia event, with a special menu created by the chefs there to compliment Estrella Galicia. You can enjoy&nbsp;ca\u00f1as on their heated and covered terrace whilst enjoying live music from <a href=\"https:\/\/www.facebook.com\/Lauraroymusic\/\">Laura Roy<\/a> and tucking into delicious tapas. Get your tickets to Little Galicia on 7 February <a href=\"https:\/\/www.eventbrite.co.uk\/e\/estrella-galicia-terrace-takeover-at-brindisa-shoreditch-tickets-41425942108\">here<\/a>.<\/h4>\n\n\n\n<h4 class=\"wp-block-heading\"><\/h4>\n\n\n\n<h4 class=\"wp-block-heading\">Brindisa Shoreditch is located on Curtain Road, about a 5 minute walk from Old Street tube station. <a href=\"https:\/\/www.brindisakitchens.com\/restaurant\/tapas-brindisa-shoreditch\/\">Book a table at Brindisa Shoreditch<\/a>.<\/h4>\n\n\n\n<p>We spoke to Magi, chef at Brindisa about his favourite dishes and tapas recommendations.<\/p>\n\n\n\n<p><strong>How long have you been cooking?<\/strong><\/p>\n\n\n\n<p><em>Since I was 15 years old. I started in a restaurant where my father was an accountant and during the holidays in summer I would cook there in the kitchen.<\/em><\/p>\n\n\n\n<p><strong>What do you find to be the most popular dish at Brindisa?<\/strong><\/p>\n\n\n\n<p><em>The octopus dish \u2013 we cook it with some tomato, shallots, and bay leaves in a vacuum bag for 7 hours, steamed at 65 degrees.<\/em><\/p>\n\n\n\n<p><strong>What\u2019s your favourite dish to cook?<\/strong><\/p>\n\n\n\n<p><em>I love to cook typical Catalan dishes, for <\/em>example<em> salt cod with a sauce that you make with tomato, garlic vinegar and sweet paprika &#8211; it&#8217;s very popular.<\/em><\/p>\n\n\n\n<p><strong>What would you recommend to someone who has never had tapas before?<\/strong><\/p>\n\n\n\n<p><em>Well to start, one tortilla, or some <\/em>bravas<em> and some croquetas. Maybe a suckling pig with a caramelized apple compote. A granny smith apple &#8211; the acidity and the sweetness from the apple and the crispness of the pork complement each other.<\/em><\/p>\n\n\n\n<p><strong>What\u2019s your favourite ingredient to cook with?<\/strong><\/p>\n\n\n\n<p><em>I\u2019ve got many \u2013 but in <\/em>Spain<em> we always cook with garlic and onion and tomato.<\/em><\/p>\n\n\n\n<p><strong>What would you suggest for vegans going out for tapas?<\/strong><\/p>\n\n\n\n<p><em>We have some dishes on the menu for vegetarians at Brindisa \u2013 chickpea stew with porcini mushrooms, it\u2019s really nice in winter \u2013 it\u2019s vegan and got a lot of <\/em>flavour<em>.<\/em><\/p>\n\n\n\n<p><strong>What would you pair with a cold glass of Estrella Galicia?<\/strong><\/p>\n\n\n\n<p><em>The octopus works really well with the beer.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Our January Venue of the Month is Brindisa in Shoreditch, London.
