This pie is a true crowd pleaser that can be enjoyed on any social occasions, or quiet nights in. A simple, yet delicious dish, thanks to the perfect combination of good quality chicken and punchy Spanish chorizo. Chef Amnbassador Dan Keane has perfectly paired with 1906 Reserva Especial.<\/p>\r\n\r\n\r\n\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Instructions<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<ol type=\"1\">\r\n<li>Lightly colour the chicken in a thick bottomed saucepan, once coloured remove from the saucepan<\/li>\r\n<li>Add the onions, garlic, thyme and bay leaf to the saucepan and sweat until translucent and sweet<\/li>\r\n<li>Add the chorizo and cook until all of the oils are released. Add the chicken back into the saucepan and deglaze with the chicken stock. Add the blended chopped tomato and cook on a low heat for 1 hour until the sauce has slightly thickened and the chicken is tender<\/li>\r\n<li>Stir in the chopped parsley and season to taste<\/li>\r\n<li>Place the sweet potato in a sauce pan add seasoned water and simmer until tender, while simmering toast the spices in a dry pan over a medium heat and until fragrant.
