Nieves’ love of Spanish cuisine stems from her childhood in Bilbao (Spain’s Basque region). She shot onto London’s restaurant scene in 1998, starting in the kitchen’s of Simply Nico before climbing to Executive Chef for Hart’s Group in 2007. Having become a pioneer in Spanish cuisine, Nieves founded Michelin-starred Sabor in 2018 with her business partner Jose Etura. We couldn’t be prouder to partner with her.

Barrafina and Parrillan’s dynamic duo, Antonio Milla and Francisco Torrico Sanchez (Paco), make a perfect pair. With a wealth of experience between them, they are shepherding the Barrafina group into a new era of Spanish gastronomy and, with it, a new chapter in Estrella Galicia Ambassadorship. Now working with us as Chef Ambassadors, Antonio and Paco are a joy to partner with.

Owen Morgan founded the Bar 44 Group in 2002, with his brother, Tom, taking Wales and Bristol by delicious storm. A leader in Spanish cuisine, Owen instills is love of Spanish produce into carefully curated menus for four unique tapas restaurants and now a popular hotel. Passion is the bedrock of Owen’s gastronomic ethos and makes him a perfect Chef Ambassador.

A trailblazer in Spanish cuisine, Monika Linton founded Brindisa in 1988. Beginning as a ground-breaking deli in Borough Market, Brindisa’s first tapas restaurant opened in 2004 and has since grown into five restaurants. With the birth of Brindisa, Monika brought the flare and flavour of Spain onto London’s gastronomic scene and changed it forever. Together we partner across a whole host of events, celebrating Spanish Gastronomy.

Plasma Physicist come Le Cordon Bleu trained Professional Chef, Caroline Martins is a distinguished gem on Manchester’s food scene. Opening SAMPA, in November 2022, Caroline brings her own unique blend of Brazilian-British fusion to the discerning palate. With a catalogue of TV experiences, including the BBC’s Great British Menu, Caroline is a rising star in gastronomy and an ambassador we are proud to partner with.

Stoking the flames of flavour for 35 years, Roberto Rapisardi opened Hellfire in 2022. Hailing from Italy’s Umbria Region, Roberto gained experiences across Mexico, Japan and South America, where he became an expert in rare meat and flame cooking. This wealth of knowledge and delicious curiosity inspires the menu in Hellfire, and makes Roberto a perfect Chef Ambassador.

Head Chef at Dublin’s Urban Brewing, Dan Keane has been reinventing flavour since 2017. Dan has been in the world of hospitality since a young age. Starting in his hometown of Leixlip, and has garnered a wealth of experience since then in both Ireland and international. These influences can be seen in his menus, and carefully curated beer pairings, with flavour beyond measure.

Brothers in business and cuisine, Victor and Dan Campos run PIGGS together. A family business since 2019, PIGGS blazed a trail in Scotland’s Spanish food scene. They specialise in serving authentic Spanish tapas in the heart of Edinburgh’s Old Town. Their unique Spanish-Scottish fusion Tapas, and their passion for all things Espana, make them perfect Ambassadors.
