A hearty British classic, infused with authentic Spanish flavours. This pie is a true crowd pleaser that can be enjoyed on any social occasions, or quiet nights in. A simple, yet delicious dish, thanks to the perfect combination of good quality chicken and punchy Spanish chorizo. Chef Amnbassador Dan Keane has perfectly paired with 1906 Reserva Especial.

 

Instructions

  1. Lightly colour the chicken in a thick bottomed saucepan, once coloured remove from the saucepan
  2. Add the onions, garlic, thyme and bay leaf to the saucepan and sweat until translucent and sweet
  3. Add the chorizo and cook until all of the oils are released. Add the chicken back into the saucepan and deglaze with the chicken stock. Add the blended chopped tomato and cook on a low heat for 1 hour until the sauce has slightly thickened and the chicken is tender
  4. Stir in the chopped parsley and season to taste
  5. Place the sweet potato in a sauce pan add seasoned water and simmer until tender, while simmering toast the spices in a dry pan over a medium heat and until fragrant. Grind the spices in a pestle and mortar until a fine powder
  6. Drain the sweet potatoes add the butter and crushed spices and gently smash, season to taste
  7. Place the chicken mix in an oven safe dish and top with the sweet potato and cook at 180c for 15 mins or until the top starts to colour

Ingredients

For the pie:

400g chicken thighs, skinned boned and cut into 1cm pieces

150g semi cured chorizo

3 medium onions (finely diced)

3 garlic cloves (crushed and chopped)

20g thyme (finely chopped)

1 bay leaf

20g flat leaf parsley (finely chopped)

500ml chicken stock

1 tin of chopped tomatoes (blended until smooth)

Salt and black pepper

For the crushed sweet potatoes:

2 large sweet potatoes (cut into 1.5cm pieces)

75g butter

5g coriander seeds

5g cumin seeds

Salt and pepper
